Words Like Honey

Substituting Honey for Sugar:

*Use 1/2 c. honey for every 1 c. sugar

*Lower oven temperature by 25 degrees

* For every 1 c. honey, reduce liquid by 3 Tbs.

Baked Honey Custard

3 eggs

1/4 c. honey

1 tsp. vanilla

2 1/2 c. milk

ground nutmeg or cinnamon

Whisk eggs, honey and vanilla in bowl. Stir in milk.

Spoon into 6 custard cups and sprinkle with nutmeg.

Place in larger pan of hot water. Bake custard for 40-45 minutes

at 350. Custard is done when a knife inserted comes out clean.

Serve warm or chilled. Lots of protein, and minimal sweetening.
